The Pale Single Malt from Michel Couvreur is an elegant and refined expression, produced from a single malt aged for 12 years in Amontillado Sherry casks, then matured in Burgundy in the cellars of the house. True to Michel Couvreur's standards, this whisky is slowly brought down to 45% with Scottish water from the Pentland Hills, thus preserving all of its aromatic finesse and balance.
The nose opens with delicate floral notes, revealing a beautiful freshness and great precision. On the palate, the attack is lively, marked by a fruity dominance that is expressed clearly. Slightly bitter nuances structure the whole, while a discreet hint of iodine brings relief and complexity. The influence of the Amontillado cask results in an elegant depth and subtle tension. The finish offers a beautiful length, persistent and harmonious, extending the fruity and saline notes with distinction.
