Abricot du Roulot
Jean-Marc Roulot, acclaimed winemaker from Meursault whose wines are sought after worldwide, embarked on a project about ten years ago to revive the family's old still. A craft of winemaker-distiller that has always existed in the Roulot family... Guy, Jean-Marc's father, was already renowned for his brandies and marc. Jean-Marc reintroduced the maceration and distillation of fruits, including the famous Abricot du Roulot that his father had carefully kept the recipe for without commercializing it. This has now been done with his son to our great delight!
This Abricot du Roulot liqueur is made from ripe apricots from the Rhône Valley (from the Combier family, to name them). The apricots are pitted and then infused in neutral spirits. After a few months, the resulting infusion is diluted with water and sugar. It's important to note that this is not just any apricot liqueur. The fruit is not distilled, the alcohol remains subtle in a liqueur approach (25% alcohol by volume), and the sugar content is low (170 g/L compared to 200 to 250 g/L in traditional liqueurs). The fruit is vibrant and expressive with a touch of acidity that brings a lot of freshness to the apricot. The purity of the fruit makes it a very digestible and even addictive liqueur!
For what occasion? Perfect for dessert (sorbet) or as a digestif for a final indulgence!
