The Le Conte des Floris estate is a hidden gem nestled in the heart of Languedoc, between Pézenas, Caux, and Gabian. The estate was born out of the winemaking passion of Daniel Le Conte des Floris, a former Parisian journalist who took the plunge in 2000 to take over old vines in Pézenas. Far from being a novice, Daniel trained among the great names of Burgundy, which explains his strong affinity for a parcel-by-parcel approach to terroirs, long oak barrel aging, and the great freshness of the wines he produces in a region known for the sun-ripened grapes. To maintain certain balances, Daniel undertakes significant vineyard work each year, certifying the 7ha of the Le Conte des Floris estate in biodynamics. In the cellar, the wines are vinified with very little sulfur and the use of indigenous yeasts. Gentle pressing is done in a vertical press. This high-end approach results in wines with a lot of freshness, balance, and natural tension. We were impressed by the elegance and finesse of the wines. Here, there is no emphasis on power or excessive concentration; the key words are finesse and balance. Bravo Daniel!
