Jean-Paul Dubost comes from a long line of winemakers established in the Beaujolais region since the 1960s. Jean-Paul quickly understood the importance of developing Beaujolais crus, not falling into the easy production of wines for immediate consumption, but instead creating high-quality crus suitable for aging, with a prominent place in fine dining. The estate now covers 37 hectares around Lantignié (Moulin à Vent, Fleurie, Brouilly, Morgon, and Régnié). The Gamay grape is, of course, the king of the vineyard. Jean-Paul, not giving in to trends, is a proponent of harvesting fully ripe grapes. The grapes are then macerated for a long period (sometimes up to 1 month!) to extract all the phenolic material and minimize the use of sulfur. The result is wines with great structure, concentration, and vibrancy.
