Magnum of red wine Givry 1er Cru Clos du Cellier aux Moines 2012, Cellier aux Moines estate
Architectural jewel of the Burgundy vineyards, the Cellier aux Moines is one of the oldest wine estates in the region. Founded in 1130 by the Cistercian monks in Givry, the Cellier and its vineyard enclosure are still preserved. During the revolution, the estate was requisitioned and sold to a family who kept it for two centuries, until the Pascal family acquired it in 2004. The Pascal family implemented a comprehensive restoration program for both the Cellier and the vineyard. A new winery was also built, equipped with state-of-the-art facilities to vinify wines with precision while preserving the authenticity of their terroir. In particular, the iconic vines: 5 hectares of the famous Clos du Cellier aux Moines, a historic premier cru of Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated biodynamically. Another distinctive feature is the absence of wine pumping thanks to this gravity-flow winery on four levels. The guiding principle for the quality of the wines is "Simplex Natura" (Let nature do its work).
This Magnum of Givry 1er Cru Clos du Cellier aux Moines 2012 from Cellier aux Moines comes from a historic plot in Givry identified for centuries by the Cistercian monks as one of the gems of the Burgundian vineyard, beautifully exposed to the south, below the Cellier aux Moines (built around 1130). The Cellier vines are cultivated biodynamically, and the grapes are partially destemmed and then put into vats almost intact to preserve all their aromatic and gustatory potential. The wine is aged in oak barrels for 18 months. This 2012 vintage has evolved beautifully over time to reach its peak today. The wine opens with elegant notes of game, undergrowth, and aromatic herbs, all supported by a beautiful minerality and a fine, elegant structure. A superb Givry at full maturity!
