A smooth and delicious Givry!
Magnum of red wine Givry 1er Cru Clos du Cellier aux Moines 2017 from Cellier aux Moines
Architectural jewel of Burgundy's vineyards, Cellier aux Moines is one of the oldest wine estates in the region. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure are still preserved today. During the French Revolution, the estate was requisitioned and sold to a family who kept it for two centuries, until the Pascal family acquired it in 2004. The Pascal family initiated a comprehensive restoration program for both the Cellier and the vineyard. They also established a new winery with state-of-the-art facilities to vinify wines with precision while preserving the authenticity of their terroir. Notably, the estate includes iconic vineyards: 5 hectares of the famous Clos du Cellier aux Moines, a historic premier cru of Givry, as well as prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated biodynamically. Another unique feature is the total gravity flow winery on four levels, eliminating the need for pumping the wines. The guiding principle for wine quality is "Simplex Natura" (Let nature take its course).
This Magnum of Givry 1er Cru Clos du Cellier aux Moines 2017 from Cellier aux Moines comes from a historic plot in Givry that has been identified for centuries by Cistercian monks as one of the gems of Burgundy's vineyards. The vineyard is beautifully exposed to the south, below the monks' cellar (built around 1130). The Cellier vineyard is farmed biodynamically, and the grapes are partially destemmed before being gently placed in the vat to preserve all their aromatic and gustatory potential. The wine is aged in oak barrels for 18 months. This 2017 vintage reveals delightful aromas of sweet cherries, plums, rose petals, and undergrowth. The palate is enveloping and delicate, a natural harmony blending wildflowers and fruit coulis (whole-cluster fermentation and rigorous grape selection contributing to this). A great wine that exalts Givry!
