Magnum of red wine Givry 1er Cru Clos du Cellier aux Moines 2019, Domaine du Cellier aux Moines
Architectural jewel of Burgundy's viticulture, the Cellier aux Moines is one of the oldest vineyards in the region. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure are still preserved. During the revolution, the domain was requisitioned and sold to a family who kept it for two centuries, until the Pascal family acquired it in 2004. The Pascal family implemented a large-scale restoration program for both the Cellier and the vineyard. A new wine cellar was also built, equipped with high-level facilities for precise winemaking while preserving the authenticity of their native terroir. Particularly the iconic vines: 5 hectares of the famous Clos du Cellier aux Moines, a historic premier cru of Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The domain covers 10 hectares, all cultivated in biodynamic agriculture. Another unique feature is the absence of wine pumping thanks to this entirely gravity-fed cellar on four levels. The key motto for producing quality wines is "Simplex Natura" (Let Nature do its work).
This Magnum of Givry 1er Cru Clos du Cellier aux Moines 2019 from Domaine du Cellier aux Moines comes from a historic plot in Givry identified for centuries by the Cistercian monks as one of the flagships of the Burgundian vineyard, beautifully exposed facing south, below the cellier aux moines (built around 1130). The Cellier's vines are cultivated using biodynamic methods, and the grapes are partially destemmed and then put into vats almost intact to preserve all their aromatic and gustatory potential. The wine is aged in oak barrels for 18 months. This 2019 benefited from a great hot and sunny vintage, resulting in very healthy grapes concentrated in sugars and aromas. All this is confirmed upon tasting: quality tannins, intense, velvety, and supple structure. The finish lingers for long seconds. A spontaneously expressive wine of great complexity, with notes of cherry, violet, raspberry coulis, and graphite. A truly outstanding wine that will make history in Givry!
