Magnum of white wine Chassagne-Montrachet 1er cru Les Chaumées 2015, Cellier aux Moines domain
Architectural gem of Burgundy's wine region, Cellier aux Moines is one of the oldest wine estates in the area. Founded in 1130 by the Cistercian monks in Givry, the Cellier and its vineyard enclosure have been preserved to this day. During the French Revolution, the estate was requisitioned and sold to a family who owned it for two centuries, until the Pascal family acquired it in 2004. The Pascal family initiated an extensive restoration program for both the Cellier and the vineyard. A new winery was built, equipped with state-of-the-art facilities to precisely vinify wines while preserving the authenticity of their terroir. This includes iconic vineyards: 5 hectares of the famous Clos du Cellier aux Moines, a historic premier cru in Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated using biodynamic methods. Another unique feature is the absence of pump-over during winemaking (from grape arrival to bottling) thanks to a gravity-fed winery on 4 levels. The motto guiding the wine quality is "Simplex Natura" (Let Nature do its work).
This Magnum of Chassagne-Montrachet 1er cru Les Chaumées 2015 from Cellier aux Moines comes from a beautiful terroir located at the top of the Chassagne hill, at an altitude of 300m. The rocky terroir with a steep slope allows the Chardonnay vines (planted in 1988) to produce small, well-formed clusters. In the cellar, the grapes are sorted and then aged for 18 months in 400-liter oak barrels (50% new barrels). This aging process integrates the wood, giving the wine a smooth texture. This 2015 vintage reveals elegant and balanced aromas of brioche, caramel, acacia, white flowers, and mild spices. The texture is rich and intense, built on mature acidity and concentrated fruit that time has enhanced. This is a great wine ready to be enjoyed for at least 6 years!
