Magnum of Puligny-Montrachet 1er cru Les Pucelles 2012 white wine, Domaine du Cellier aux Moines
Architectural gem of Burgundy wine, the Cellier aux Moines is one of the oldest wine estates in the region. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure have been preserved to this day. During the revolution, the estate was requisitioned and sold to a family that held onto it for two centuries, until the Pascal family acquired it in 2004. The Pascal family initiated an extensive restoration program for both the Cellier and the vineyard. A new winery was built, equipped with top-notch facilities to vinify wines with precision while preserving the authenticity of their terroir. This includes iconic vineyards: 5 hectares of the famous Clos du Cellier aux Moines, a historic premier cru of Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated biodynamically. Another distinctive feature is the absence of wine pumping thanks to the gravity-fed winery spread over four levels. The motto guiding the quality of the wines is "Simplex Natura" (Let nature take its course).
This Magnum of Puligny-Montrachet 1er cru Les Pucelles 2012 from Cellier aux Moines comes from a mythical plot in Puligny, located just a few dozen meters from the grand cru Montrachet. Here, we are in the realm of the most beautiful terroirs of the Côte de Beaune for Chardonnay. The Cellier aux Moines plot is at the heart of Les Pucelles, with vines planted in 1970. The wine is aged in barrels, including 50% new oak, for 20 months. The oak influence is perfectly integrated thanks to large 400-liter barrels, giving a rounded texture to this cuvée. This 2012 is in perfect condition, showcasing tangy and mineral notes that time has enriched with tertiary aromas of candied fruits, citrus, and buttered brioche. A complex wine with remarkable evolution!
