Architectural flagship of Burgundy's viticulture, the Cellier aux Moines is one of the oldest wine estates in the region. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure are still preserved. During the revolution, the estate was requisitioned and sold to a family that held onto it for two centuries, until the Pascal family acquired it in 2004. The Pascal family implemented an extensive restoration program for both the Cellier and the vineyard. A new winery was built, equipped with top-level facilities to vinify wines with precision while preserving the authenticity of their terroir of origin. In particular, the iconic vines: 5 hectares of the famous clos du Cellier aux Moines, a historic premier cru of Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated using biodynamic methods. Another unique feature is the absence of wine pumping due to the gravity-fed winery spread over four levels. The motto serving the quality of the wines: "Simplex Natura" (Let Nature do its work).
