Pierre-Olivier Garcia indeed uses an atypical technique called "berry by berry": it consists of harvesting and drastically sorting the grapes, by cutting the stem (the vegetal part of the bunch) with scissors to leave the pedicel (the stem in contact with the grape berry) intact. A very time-consuming and labor-intensive practice, therefore very rarely used by winemakers. Without compromise, Pierre-Olivier applies this technique to all his vintages, with one third of the harvest being treated this way (1/3 is destemmed, the other third is whole cluster). This Nuits Saint Georges Les Charmois comes from a vineyard planted on a steep slope composed of limestone soils resting on a silty clay subsoil rich in iron. A unique terroir that delivers a fresh and fragrant wine every year, with notes of Morello cherry and delicate floral aromas. A Nuits-Saint-Georges that emphasizes finesse and elegance compared to Pierre-Olivier Garcia's other wines.
