Magnum of white wine Chassagne-Montrachet Premier Cru Les Chaumées 2013, Domaine du Cellier aux Moines
Architectural gem of the Burgundy vineyards, the Cellier aux Moines is one of the oldest wine estates in the region. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure are still preserved. During the revolution, the estate was requisitioned and sold to a family that kept it for two centuries, until the Pascal family acquired it in 2004. The Pascal family implemented an extensive restoration program for both the Cellier and the vineyard. A new winery was also created, equipped with state-of-the-art facilities to vinify wines with precision while preserving the authenticity of their terroir. In particular, the iconic vineyards: 5 hectares of the famous clos of Cellier aux Moines, a historic premier cru of Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated using biodynamic methods. Another special feature is the absence of pumping during winemaking (from grape arrival to bottling) thanks to this gravity-fed winery on 4 levels. A motto at the service of wine quality: "Simplex Natura" (Letting Nature do its work).
This Magnum of Chassagne-Montrachet Premier Cru Les Chaumées 2013 from Domaine du Cellier aux Moines comes from a beautiful terroir located on the upper part of the Chassagne hillside, at an altitude of 300m. It is a rocky terroir with a steep slope where the Chardonnay vines (planted in 1988) produce small, well-formed clusters. In the cellar, the grapes are sorted and then aged for 18 months in 400-liter oak barrels (50% new barrels). The oak influence is well integrated, giving a velvety texture to the wine. This 2013 vintage reveals elegant and subtle aromas of citrus, sweet spices, and tropical fruits. The texture is refined, and the wine has matured beautifully in the bottle, gaining balance and aromatic complexity. A great white wine ready to be enjoyed!
