Magnum of wine white Chassagne-Montrachet 1er cru Les Chaumées 2017, Domaine du Cellier aux Moines
The Cellier aux Moines, an architectural gem of the Burgundy vineyards, is one of the oldest wine estates in the region. Founded in 1130 by Cistercian monks in Givry, the Cellier and its vineyard enclosure have been preserved until today. During the French Revolution, the estate was requisitioned and sold to a family who kept it for two centuries, until the Pascal family acquired it in 2004. The Pascal family initiated a vast restoration program for both the Cellier and the vineyard. A new winery was built with state-of-the-art facilities to vinify wines with precision while preserving the authenticity of their terroir. Particularly noteworthy are the iconic vines: 5 hectares of the famous Clos du Cellier aux Moines, a historic premier cru in Givry, as well as some prestigious plots in Puligny and Chassagne Montrachet. The estate covers 10 hectares, all cultivated using biodynamic methods. Another distinctive feature is the absence of pumping during winemaking (from grape arrival to bottling) thanks to the gravity-fed winery spread over 4 levels. The guiding principle for the quality of the wines is "Simplex Natura" (Let nature take its course).
This Magnum of Chassagne-Montrachet 1er cru Les Chaumées 2017 from Domaine du Cellier aux Moines comes from a beautiful terroir located on the upper slope of Chassagne, at an altitude of 300m. The stony terroir with a steep slope allows the Chardonnay vines (planted in 1988) to produce small, well-constituted clusters. In the cellar, the grapes are sorted and then aged for 18 months in 400-liter oak barrels (50% new barrels). The oak is well integrated, giving a smooth texture to the wine. This 2017 reveals elegant and balanced aromas of apples, pears, ripe citrus fruits, white flowers, and almonds. The texture is delicate, built on ripe acidity and concentrated fruit. Best enjoyed between 2020 and 2030.
