This bottle of Brut Nature Champagne from Maison Drappier is the purest and most radical expression of Pinot Noir from Urville, in the heart of the Jurassic limestone terroirs of Kimméridgian in the Côte des Bar. Conceived by Michel Drappier, this zero-dosage cuvée in Blanc de Noirs, 100% Pinot Noir, pushes the house's natural philosophy to its culmination: estate's organic yeasts, less than 30 mg/l of sulfites, gravity vinification, no filtration or decoloration, and aging for 36 months in the bottle. The golden vermeil color announces a nose of great freshness, with freshly pressed black grapes, red and white fruits, and citrus. The palate is full and generous, carried by a beautiful vineyard peach pulp and a bouquet of aromatic herbs, before an elegantly spicy finish. A fine, tense, and remarkably pure champagne, as digestible as it is sincere.
