This Ladoix Rouge 2023 draws its identity from the foot of the slope, on a typical terroir of the Côte de Beaune - marls and limestones - which gives finesse and minerality to this vintage.
Winemaking & Aging:
-Manual harvest, ensuring a meticulous selection of grapes.
-Total destemming followed by a cold pre-fermentation maceration (3 days), preserving the most delicate aromas.
-Fermentation in concrete tanks for 15-20 days, with controlled temperature (25-34°C) and moderate punch-downs, to harmoniously extract the tannins.
-Aging for 12 months in French oak barrels, including 15% new oak, followed by blending and filtration in stainless steel tanks on fine lees.
