La Gauloise Jaune 5 ans is a bicentennial liqueur of absolute rarity, produced in extremely limited quantities, around 300 bottles. Aged for five years in old oak barrels that previously held a Grand Cru Classé Blanc des Graves, it develops a remarkable aromatic depth and a texture of great smoothness. Inheritor of a historical recipe rediscovered in 1783, this liqueur embodies a unique artisanal know-how that has remained unchanged for over two centuries.
Its secret recipe is based on a meticulous blend of spices, plants, and fruits, macerated and then double-distilled over a wood fire in 19th-century stills. The extended aging gives it an intense yellow color with golden reflections, while the nose is subtle and delicate, marked by hints of camphor. The palate is full and harmonious, combining flavors of curry, candied lemon, and saffron, before stretching into a long, fresh, and slightly peppery finish. An exceptional liqueur to be enjoyed neat, on the rocks, in coffee, or in cocktails for bold pairings.
