The Champagnes Chavost are above all the incredible transformation of a house that was originally founded in 1946 through the association of several winemakers from Chavot-Courcourt, a village in the Marne valley, south of Epernay. A classic cooperative model that allows to pool strengths, secure supplies, and optimize commercial presence. The 180-degree turn took place in 2019 with the arrival of Fabian Chavost, a young cellar master who has gained experience all over the world. From the beginning, he believed in producing champagne brut nature without added sulfites, an extremely rare and almost unfindable thing in Champagne, especially in a generally well-regulated cooperative. Success was not long in coming and the 20,000 bottles produced during the 2020 vintage sold out.
A logical success when tasting these unique profile Champagnes Chavost. Fabian was kind enough to provide us with a few magnums whose purity, freshness, and delicate bubbles will surely surprise many!
